Diving further into our fall creative twists of socially distanced dining experiences, we’re super excited to welcome back our favorite foraging tastemakers, Chefs Ken and Ashley Miller, taking cues from the season ahead bringing a gorgeous vegan experience to the frame table, as they preview their first solo project Yarrow. Studying at LeCordon Bleu and cutting their teeth at numerous culinary darlings: Chicago’s Modern French NoMI Kitchen, Chicago’s Acadia, Sous-Chef under Two Michelin Star Chef Tom Lents of The Apparatus Room and Executive Chef at Novi’s adored American Brasserie, Toasted Oak, this powerhouse chef couple clearly understands the beauty of nature and all it has to offer us both in spirit and on our plates. For as long as Chef Ken Miller can remember, nature and food have shared space very close to his heart. Summers as a young child were spent at his grandparents’ house where he fell in love with the garden and the forest, picking mulberries for jams and running his hands over the herbs; becoming intoxicated with the alluring scent of fresh lovage, lemon balm, and mint. From early on he knew that nature was his sanctuary. How he would weave the fabric of food into his passion came next. Testing practices of our ancestors that lived off the land out of necessity…this September menu gives seemingly “useless” scraps : a second life, recycling elements of each course into garnishes and alternative ingredients, calling for a zero-waste revolution. Allowing the entire frame team to repurpose, reimagine and innovate. A “waste not, want not” ethos is the core of this collaborative dinner between kitchen and bar. Ever the adventurists were jonesing to share an evening absorbing Ken and Ashley’s foraging culture and their stunning cuisine based on the preservation of the wild terrior around us. From farm-to-fork-to glass-producing zero waste.
