Booze and BaoBuns by Chef Mark Butler. Count Us In. Studying at Le Cordon Bleu and playing off of his 13 years of fine dining experience: Sous Chef under two-Michelin-star Tom Lents at Detroit’s Foundation Hotel, Pastry Chef at Katoi (if you were fortunate enough to catch Katoi’s residency when we opened 4-ish years ago, you’ll know what a rare talent Mark is) and Chef de Partie at The French Laundry, Napa. Bringing his creative acclaim to frame, previewing his brainchild concept, Bao Chicka Bao Bao, Mark brings tasty creations and energy to our backlot tent with a menu nodding to his years at Morimoto in Napa, where he mastered the BaoBun and his adoration with Asian cuisine. We can hardly wait to spend a week with Mark before he dives into his next exciting project…at the hotly anticipated Freya in Detroit’s Milwaukee Junction alongside the brilliant Sandy Levine and Chef Doug Hewitt.
