The Meatstress, Larissa Popa is coming to frame for a hands-on chicken butchery workshop where you’ll learn how to execute basic chicken butchery skills, knife skills and learn the primal cuts of chicken, plus breaking down and trussing up a chicken.
Plan on grabbing a knife and getting your hands dirty in this frame workshop filled with various chicken cookery techniques with an end goal to eat and utilize the entire animal. If you haven’t met Larissa (aka The Meatstress) be prepared to fall in love with her (and possibly your new) bubbling passion for butchery and charcuterie making.
In-the-know with our best local farmers, Larissa works very closely with each of them to guarantee the highest quality product. According to Larissa, “ It is important for every chef to know who raises their meat and what it is fed. “
After your time in the kitchen, relax and sit down with your new found friends and enjoy a house made chicken lunch. Chicken Poele, Roasted Potaotes + Jus Lie + Mushrooms.
And yes……. you’ll go home with your “own” whole chicken, the very one you broke down at the start of the workshop.
